A bit of history

According to one of the legends, marmalade first appeared in Scotland. The queen of this state ordered her cook to candied oranges. He was a little surprised, but the order was carried out.

But suddenly the maid came and said that Queen Mary was sick and had lost her appetite, so she would not try the dessert. The frustrated cook offered a delicacy to the maid, who ate it with pleasure, repeating the phrase "Marie malade", which translates as "Marie is sick." This is how this dessert and its name appeared.

Gradually, marmalade became popular in the UK and other countries. The name is translated differently from different languages. In French, it sounds something like "overcooked, boiled". In many English-speaking countries, the word only refers to citrus fruit jam. And from German it is translated as "jam".

What is it and what is it made from?

Marmalade is usually called a sweet dish made from fruits or berries with the addition of sugar, as well as a variety of thickeners. Ingredients such as agar-agar, pectin or gelatin can be used as thickeners.

But some of them are found in certain fruits, so adding them in this case becomes optional. Fruits and berries are not the limit for real chefs who can cook amazingly delicious marmalade even from vegetables.

Option number 1

You can easily and quickly prepare a delicious marmalade from jam. Here's what you'll need:

  • 2 cups of any jam;
  • 1 lemon;
  • 20 grams of gelatin;
  • ½ glass of water.

Cooking method:

  1. First prepare the gelatin. Just fill it with water and leave to swell.
  2. While the gelatin swells, move on to the jam. It must be rubbed through a sieve, passed through a meat grinder or chopped in a blender. This is necessary so that the marmalade is homogeneous and does not have lumps.
  3. Cut the lemon into two halves, squeeze the juice.
  4. Transfer the jam to a saucepan with a thick bottom, put it on a slow fire. When the mass begins to boil, carefully pour the gelatin into it, while mixing everything thoroughly.
  5. Turn off the heat and add lemon juice to the composition, mix again.
  6. Divide the mixture into molds and place in the refrigerator to set.

Option number 2

An unusual spicy marmalade, which is so popular in some European countries, can be made from onions. List of ingredients:

  • 2 kg of red onion (it is better to use it, since onion is bitter);
  • 300 ml of red wine;
  • 100 ml of olive oil;
  • 150 grams of honey (it is better to use liquid rather than candied);
  • 150 grams of sugar;
  • 2 branches of thyme;
  • 1 teaspoon coriander seeds.

Cooking method:

  1. Peel, wash and cut the onion into half rings or in any other convenient way.
  2. Heat the olive oil in a fairly deep skillet. Then add the onion and fry it until it becomes translucent and soft. But it should not darken and burn!
  3. Place all the spices in cheesecloth, make a bag out of it and place it in the onion. The taste of herbs will pass into the dish, but there will be no twigs and grains in the finished marmalade.
  4. Now you can put sugar in the pan and. After that, mix everything thoroughly.
  5. Heat the wine (it should be quite hot) and pour into the pan.
  6. Now reduce the heat to a minimum and simmer the mass without a lid until it becomes thick and viscous.
  7. Ready marmalade can be cooled and served. It goes well with fish and meat dishes. And some use it in its pure form.

Option number 3

This recipe involves using as the main component. For cooking you will need:

  • 500 grams of fresh pumpkin;
  • 250 grams of sugar;
  • 3-5 tablespoons of lemon juice.

Cooking method:

  1. Pumpkin needs to be peeled and seeds removed. Then either boil it or steam it. The second option is more preferable, as it allows you to save the taste and maximum nutrients.
  2. Now grind the pumpkin with a blender or meat grinder. You should get a homogeneous mass.
  3. Transfer the pumpkin puree to a heavy bottomed saucepan, add the sugar and lemon juice and cook until thickened.
  4. Move the finished and slightly cooled mass into a rectangular shape. The thickness of the layer should not exceed 2-3 centimeters. To easily separate the composition from the bottom, cover it with parchment, cling film or foil.
  5. Put the form in a cool place or in the refrigerator for a day.
  6. Cut the frozen layer into cubes or any other shapes, roll each of them in sugar.
  7. A healthy and tasty treat is ready!

Option number 4

Make delicious apple marmalade. You will need:

  • 1-1.5 kg of apples;
  • 0.5 kg of sugar.

Cooking method:

  1. Peel the apples and grate on a fine grater.
  2. Transfer the applesauce to a heavy bottomed saucepan and place it on the fire.
  3. Add sugar, mix everything. Boil the composition until it begins to thicken.
  4. Cool the mass and transfer it to a flat form, lined with parchment soaked in oil or cling film.
  5. Place the mold in the refrigerator overnight to set the marmalade.

Option number 5

Incredibly delicious orange marmalade. Ingredients:

  • 1 lemon;
  • 700 grams of oranges;
  • 500 grams of sugar.

Cooking method:

  1. Peel oranges, divide into slices, remove all films so that only the pulp remains.
  2. Put the skins in a gauze bag, they will be needed to add flavor to the dessert.
  3. Transfer the pulp of the orange and the bag with the peel into a saucepan, put it on a slow fire.
  4. When the pulp begins to boil, add lemon juice and sugar.
  5. Boil the mass until thickened.
  6. Remove the bag and spread the cooled composition into ice molds. Put them in the refrigerator overnight.

  1. You can make marmalade from almost any berries and fruits, so don't be afraid to experiment.
  2. If you use gelatin or a thickener, then follow the instructions on the package when diluting and preparing, otherwise the marmalade will either not harden or be too hard.
  3. If you want to make bright colored marmalade, use natural fruit juices or food coloring.
  4. Do not immediately put hot marmalade in the refrigerator, it will harden badly. First it must be cooled, and only then placed in the cold.
